A Quick Summer Peach Torte

If you have a jar of artisanal or homemade peach preserves in the pantry, here's a quick dessert. It makes a great evening dessert to accompany a glass of Prosecco, or even a good afternoon snack.

As autumn nears and the feeling of those lazy, hazy days of summer is still in the air prepare a simple but delicious and elegant dessert that is quick but tastes fresh. Use the flavors of summer, peaches or blueberries, that have their own inimitable fragrance and flavor.

To put together a quick snack or dessert and to make this even simpler you can buy ready-made puff pastry. And to make this dessert even more delectable, serve with fresh slices of fruit. If you choose peach preserves then serve with some fresh peaches sliced on the side; if you use blueberry preserves, serve with some fresh blueberries.

You can also serve this dessert in the evening with a Bellini (a drink made with sparkling white Prosecco and white peach juice); it makes a perfect pairing.

Peach Torte

(Makes 6 servings)

2 sheets of puff pastry
1 12-ounce jar of peach or blueberry preserves
1 egg yolk
1 tablespoon unsalted butter
1 tablespoon flour

Preheat oven to 375 degrees. Butter and flour a pie pan. Remove puff pastry from package. Line bottom of pie pan with one sheet of puff pastry, cutting off excess dough to fit. Spread a layer about 1/8" thick of preserves, setting aside 2 tbsp of preserves for later.

Top this with the remaining sheet of puff pastry and seal layers by pressing with fingertips. Bake at 375 degrees for 30 minutes. Remove from oven, let cool. When cooled, spread the two remaining tbsp of preserves on top. Serve with fresh sliced peaches or fresh blueberries.
